  • Grilled peach and corn salad (would be great with grilled shrimp or chicken)
  • Here is a quick and simple dinner salad that’s easy to make if you are already grilling meat:
    • Slice your eggplant, green peppers and candy onion into pieces that will fit on the grill. Toss with olive oil, salt and pepper.
    • Grill over medium heat until soft and nicely charred, checking often to avoid scorching.
    • While the vegetables are grilling, chop 2 cloves of garlic. Add to a dish with the juice of one lemon and a little more olive oil.
    • Take the vegetables directly from the grill to the dish with the garlic mixture and toss. Optional: Add feta, parmesan or goat cheese, as well as fresh basil or parsley. Fresh sweet corn cut from the cob is also great mixed in with this.
    • Leftovers are great on sandwiches.
