CSA Week 3: May 16 and 18, 2016

In this week’s box:

10 pounds asparagus
1 dozen eggs
2 heads Romaine lettuce
2 bunches onions
*Optional Bonus* 4 pounds pick-your-own strawberries to be picked at Braehead Farm May 18-20 OR May 23-27

Meal Plan

Night 1: Asparagus guacamole (you won’t need four of your CSA onions in this recipe, one will do the trick), served in romaine leaves (use them like “boats”) and topped with shrimp, sliced rotisserie chicken or your protein of choice.
Night 2: Grilled meat, hamburgers or hot dogs with a side of Grilled Asparagus and Feta Salad
Night 3: Asparagus Gruyere tart with a side salad
Night 4: Strawberry, bacon and feta salad
Night 5: Asparagus soup and grilled cheese. If you’re looking for a new asparagus soup, try this take on cream of asparagus made with pureed white beans
Night 6: Asparagus, green onion and goat cheese quiche (Use a pre-made crust to make this extra easy, but if you’ve never tried it, homemade pie crust isn’t too hard and it’s delicious.)
Night 7: Leftover soup with leftover tart or quiche
